Brie de Meaux is named after the French town of Meaux, where it is made.  Meaux is situated in the region of Brie, which is located 50km to the east of Paris.  Made since the 1930's by the Dongé family, who are the undisputed champions of Brie de Meaux production.  They are one of the last 7 producers of this cheese.
This is a raw, soft unpasteurised cows' milk cheese.  It is covered with a bloomy rind, which is a result of inoculation with Penicillium Candidum molds.  As the cheese matures, the rind develops reddy brown patches.  The cheese is ready for consumption when approximately half of the straw coloured pate is ripe and soft.  Brie has a rich, milky taste undefined by sweet and buttery flavours of mushrooms, truffles and almonds. 

It pairs perfectly with champagne or a bold red wine.
