Cerney Ash is a delicious pyramid shaped goats cheese, which is coated with an oak-ash and sea-salt mix.
The recipe was based on the traditions of Valencay cheese, from the Loire Valley in France. Cerney has a delicious, thick mousse-like texture. It has a fresh, mild flavour when it is around 1-2 weeks old, but will develop a deeper fuller flavour as it ripens and matures.
It has a milder flavour than the Valencay cheeses that inspired it The flavour is less "goaty". This is because the male and female goats are kept separately in England, where as French farmers keep them together, which can give the milk a distinctive "billy goat" flavour.
