Colston Bassett Stilton is often considered to be the best Stilton. It is made in one of the smallest dairies in the UK. They make it in the traditional way, using pasteurised cows' milk and hand-ladled curd. As a result, the texture of Colston Bassett Stilton is more luscious, creamy and full bodied.
It has a close, creamy texture. It tends to be pale in the centre and then darkens to amber towards the edge. It has an earthy flavour, which is balanced by the richness of the blue mould and butter. When young it tends to be slightly tangy, but this will disappear as the cheese matures.
Now a protected cheese, Stilton can only be produced in the counties of Nottinghamshire, Derbyshire and Leicestershire.
