Crozier Blue is a pasteurised sheeps' milk version of the famous 'Cashel Blue'. First made in 1993, Crozier Blue is the only blue cheese made from sheeps' milk in Ireland. Crozier Blue is a natural-rinded blue cheese. Depending on the conditions, the cheese has a pale white paste, with greyish green mould. The paste is chalkier towards the centre of the cheese. The taste is rich, creamy and mild, which develops into a sweet blue flavour when it matures. It is much slower to mature than Cashel Blue.
