Epoisses de Bourgogne is a soft cows' milk cheese. It has a creamy and firm, but chewy texture. Epoisses cheese has a distinctive sticky, wrinkly rind, which can vary in colour from cream to brick red. It is categorised as a washed-rind cheese, as the surface of the cheese is regularly washed for about 4 to 6 weeks, with a mixture of brine and Marc de Bourgogne Brandy. The colour of the rind gradually darkens as the Brevibacterium moulds develop. Unfortunately this cheese is banned from Parisian public transport, because of it's stench!!! But despite it's pungent smell, Epoisse has a delicious spicy, sweet and salty flavour.
