Gorwydd Caerphilly is an artisanal Welsh cheese, made by Todd, Maugan and Kim Trethowan at their Gorwydd Farm.  It was originally made in the shadows of the Cambrian Mountains, but in 2014 production was moved to Somerset.  It is a raw milk, naturally rinded, cloth-bound cheese.  The cheese is matured for around 3 months, to give a wonderfully oozy, mushroomy cream layer around a springy, citric acid core.
