Kaltbach is a firm pressed Swiss mountain cheese.  It is a semi-soft cheese, which has a particularly melt-in-the-mouth, creamy texture due to the addition of an extra portion of cream.  The cheese is aged for 3 months before being refined for a further 3 months in the famed Kaltbach Caves. During this time the unique microflora of the caves gives the cheese its distinctive flavour.  The result is a beautiful, rustic brown rind and a flavourful nutty, caramel flavour
