Description:
A cousin to White Lake Cheese's renowned classic, Rachel. Katherine is a raw milk goats’ cheese that is washed in Somerset Cider Brandy. It’s semi-hard, springy texture and mellow taste are reminiscent of the Tomme-style cheeses that were traditionally made in French monasteries. It doesn’t have a typical goaty taste, but still has a complex savoury flavour. However, as the cheese matures the flavour will get sweeter. A particularly lovely cheese for the summer months.
