Manchego is produced in the La Mancha region of Spain, using milk from the Manchego breed of sheep. Traditionally made in grass baskets, modern Manchego is today made in moulds with a similar zig zag pattern. The rind is inedible. A pattern showing an ear of wheat is typically pressed into the top and bottom of the wheels of cheese. During the maturation process the cheese is rubbed with olive oil, which gives the cheese a delicate spiciness.
Perfect when paired with Sherry, Port or a dry red wine. You could also try it with a little Membrillo (Quince Jelly).
