Montgomery cheddar is one of the few truly traditional, handmade, unpasteurised types of cheddar.  In fact it's one of the 3 remaining traditional unpasteurised artisan Somerset cheddars.  It is made by Jamie Montgomery with great skill and care using milk from their herd of 200 Friesian Cows. The cheeses are aged in muslin cloth and stripped after a long maturing process.  The mature cheddar has deep, rich, nutty flavours.  It has a slightly crumbly texture that is characteristic of a properly developed, cloth bound cheese.
