Roquefort is the second most eaten cheese in France and is often called the 'cheese of kings and popes'. This cheese is protected by AOC guidelines and is now only made by a handful of producers.  Roquefort cheese is moist and breaks into little pieces easily.  Genuine Roquefort is rich, creamy, sharp, tangy and salty in flavour.  It’s paste has a bright white colour and the veining tends to have a greeny hue, rather than blue.  The AOC protection means that Roquefort must be matured in the 2km long natural ‘Combalou’ caves of Roquefort-Sur-Soulzon in southern France.  The distinctive characteristics of Roquefort come from the penicillium roqueforti mould, which is naturally found in soil and on the walls of the caves.
