A powerful, Scottish style cheddar that tastes sharp and tangy.  This cheese is made using traditional methods from the south of England (i.e. traditional bacteria ferments to make the cheese, "cheddaring", making by hand and cloth-binding).  It is matured for 14 months, to give it a powerful flavour.
