Description:
Taleggio is a washed-rind, smear-ripened Italian cheese, which gets it's name from the region of Val Taleggio in northern Lombardy.  It's one of the oldest soft cheeses in the world & is produced every autumn & winter.  During maturation the cheese is washed once a week with sea water.
It has a strong, pungent smell, but the taste is surprisingly mild & creamy - similar to Gorgonzola Dolce.  
As well as an excellent cheese board cheese, Taleggio can also be served grated on salads &, since it melts well, it can also be used in risotto or on polenta.
